It’s a beautiful Sunday evening in Dallas. And a totally wasted Saturday night encouraged us to make this evening worthwhile. Thus, began a thorough pantry search.
What’s better than making homemade healthy energy bars (balls in this case) with these beautiful babies. There are so many ingredients one can play with while making these. Use granola, oats, toasted salted nuts, chia seeds, chocolate chips, dried apples, berries.. Phew! Whatever you like and can find.
We had some dates and dried figs and decided to roll them with almond, cashews, walnuts, flaxseed, pumpkin and sunflower seeds.
It’s perfect for someone like us who can’t stay away from these bad boys and take a bite every 30 mins and curse themselves for the next 30. Lol!
For some perfect snakin’ get
1cup or as desired mixed nuts and seeds
7-8 roughly chopped dried figs
7-8 pitted roughly chopped dates
1tablespoon maple syrup , almond butter or organic honey to bind
Add the chopped dates and figs in the blender and blend them well.
Make a fine paste or keep it chunky (the way we like it).
Add some honey or maple syrup to bind the two and add chopped nuts and seeds.
You can use almond butter too but since we had raw almonds going in, we skipped the step.
Give it a good whirl.
Scoop it out and place it on a sheet or tray and press the mixture down to the thickness you like. Refrigerate it for 30-40 minutes. Take it out and cut them into your desired shape.
We rolled em into little balls right away.
Isn’t this the easiet thing you ever made? Seal them in airtight container or ziplock bags.
